Traditional Samokov zelnik recipe prepared with leavened dough.

Ingredients:

  • For the dough: 500g flour, 25g yeast, 1 tsp vinegar, 2 tbsp lard, 2 tbsp oil, 250ml warm water, 1 tsp salt
  • For the central filling: 400g leeks, 250g cheese, 200g yogurt, 3 eggs
  • For the outer filling: 2 eggs, 200g cheese
  • For brushing: 150g butter, 50ml sunflower oil, 50g yogurt

Instructions:

  1. Prepare yeast dough and let it rise.
  2. Prepare the leek filling.
  3. Roll out 9 dough balls into thin sheets. Place one sheet in a pan, add the leek filling in the center. Cover with another sheet.
  4. Fill the other sheets with the cheese and egg mixture, roll them into logs and arrange around the center.
  5. Brush generously with melted butter and oil. Fold the hanging edges of the bottom sheet over the rolls. Brush with yogurt.
  6. Bake at 200°C, then reduce temperature to 150°C to finish.
