Recipe for traditional Samokov zelnik without yeast, as it was prepared in the past.
Ingredients:
- For the dough: ~1kg flour, 1.5 cups water, 1 tbsp salt
- For the central filling: ~1kg leeks (or seasonal greens), 70ml oil, 5 eggs, 300g cheese, 500g thick yogurt, 2 tbsp flour
- For the outer filling (“kraishnik”): 200g cheese, 2 eggs, 200g butter (or fat mixture)
Instructions:
- Knead elastic dough and divide into 9 balls (one larger than the rest).
- Roll out the largest ball into a sheet much larger than the pan.
- Prepare the leek filling.
- Place the large sheet in a greased pan with edges hanging over. Place the leek filling in the center and cover with a smaller sheet.
- Fill the remaining sheets with the cheese and egg mixture, roll into logs and arrange around the center.
- Fold the hanging edges of the large sheet over everything.
- Bake at 180-200°C until golden. Sprinkle with water and cover with a cloth to soften.
