Description:
A traditional colorful kozunak from the village of Asenovo, richly filled with cheese, walnuts, raisins, poppy seeds, and Turkish delight.
Ingredients:
3 kg flour
500 ml fresh milk
1 kg sugar
10 eggs
100 g cheese
100 g raisins
100 g crushed walnuts
100 g poppy seeds
1 box of Turkish delight (lokum)
250 g lard
1 lemon
1 cup lemonade
1 tbsp dry yeast
8–10 saccharin tablets
1–2 tsp salt
1 tsp red food coloring
For the starter (kvas):
500 ml fresh milk
3 eggs
5 tbsp dry yeast
2–3 cups flour
For brushing:
2 egg yolks
Preparation:
Prepare the starter and leave it to rise.
In a large bowl, mix the sugar, milk, lard, salt, and beaten eggs.
Add this mixture to the risen starter, along with lemon zest, dissolved saccharin, and lemonade. Gradually add flour.
Color part of the dough red. Leave both doughs to rise.
On the red dough, arrange the filling and roll it up.
Form a ring, brush with egg yolks, let rise again, and bake at 200°C, gradually lowering the temperature to 175°C.
